Easy and simply recipe from Women's Weekly
INGREDIENTS:
250 g soft butter
1 cup castor sugar
4 eggs
3 over-ripe bananas, finely mashed
2 cups self-raising flour
METHODS:
1. Cream butter and sugar in a small bowl with electric mixer until light and fluffy
2. Add eggs one at a time, beating well after each condition. Stir in bananas, then sifted the flour
3. Pour into well greased 20 cm baba or ring pan
4. Bake at 180 degree celsius for about 45 minutes
5. Stand a few minutes before turning cake onto wire rack to cool.
note: can be frozen for up to a month
